1/4 cup Jack Daniel’s® Tennessee Whiskey
4 large sweet potatoes
1/4 cup butter
3/4 cup brown sugar
1/4 tsp salt
1 tbsp fresh orange zest (optional)
1/2 cup lightly toasted chopped pecans, divided
- Place sweet potatoes in a large pot and cover completely with water. Add a little salt to the water. Bring to a boil, cover, and cook until tender, about 35 minutes. Drain and let cool enough to handle.
- Heat the oven to 350 degrees F. Peel off skins and place potatoes in a large mixing bowl. Mash potatoes with butter until slightly lumpy.
- Stir in sugar, salt, orange zest and Jack Daniel’s Tennessee Whiskey. Spoon half of sweet potato mixture into a buttered 2-quart casserole dish. Sprinkle with ¼ cup pecans.
- Repeat with another layer of remaining potatoes and pecans. Bake for about 30 minutes or until heated through.
